In some cases, organizations pass on the processing fees to the donors
themselves, and the donors will (gladly) pick the tab, because they know
it's philanthropy.
On the online donation forms, there's an option to select whether the donor
will bear the processing fee or otherwise. However, note that the donor is
more likely to pick up the tab when she clearly knows how much more she
will be charged. Also, I've seen this model succeed with relatively smaller
donation amounts.
