Interesting question.
One of the interesting aspects is that, in this case, the benefits are being keyed to the registration fee: sponsors make a contribution, and receive x registrations for which they would have otherwise paid $y apiece.
This is a little different from, say, the typical charitable golf tournament, where, say, a golfer registers for $y and receives benefits valued at $z. So a sponsor who is entitled to send x golfers gets benefits of x golfers times $z benefits per golfer, even though an individual golfer would have had to pay $y not $z. (E.g. a golfer registers for $150 and receives benefits of $100, so the sponsor sending 4 golfers has an FMV of 4 times $100 not 4 times $150).
I guess the difference is that no portion of the individual registration fee is considered a charitable contribution?
In any case, it seems to me that when you solicit a sponsor and they pledge, you have an agreement about what they are to receive, so it seems fair to base the FMV on what they would otherwise have had to pay at that time. In fact, you likely—explicitly or in practice—establish a sponsorship package with a required contribution and specified benefits, so it probably doesn’t matter when the sponsor signs on.
And Josh is likely right, that these are good-faith estimates and these variances probably aren’t material.

I am probably over thinking this, but…
We have an outside group holding an event to benefit us, and they are seeking sponsors, who are donating directly to us (vs to this outside group, who then cuts us a check for all proceeds from the event).
In setting up the appeal packages for sponsor levels, two people in Community Outreach gave me different FMV for one of the benefits, which is, X # of registration fees. With races/walks/runs, I guess the registration fee goes up if you don’t sign up by a certain date?
Anyway, when I asked why the total FMV was different, depending on who gave me the info, one person said they did an average instead of the initial registration fee, because some sponsors made their donation before the fee increased. My thinking is, if the host was pushing sponsorships from the beginning, and we got, say, 10 sponsors, it doesn’t really matter when they paid, them saying yes was a pledge, so the FMV is the original registration fee, not the increased fee for paying/registering late?
Again, I’m sure I am WAY overthinking this! ADD+a dash of OCD+gift processing+IRS = AAAAGH! There’s also another plus, but I won’t get into that here 😊
